Ingredients:
1- Steelhead or Coho, filleted (pin bones pulled out) and cut into 1"- 1-1/4" squares.
1-medium to large onion, peeled and cut in quarters
1- large green pepper cut in large chunks
1-2 apples peeled and cored then cut into pieces that can be skewered.
several small salad tomatoes
12" bamboo or wire skewers
Zesty Italian salad dressing
Cooking Directions:
Assemble the kabobs by alternating tomato, onion petal, fish, green pepper, apple, onion petal fish, etc. (or any combination you wish.
Coat the assembled kabobs with zesty Italian salad dressing, seal in a zip lock baggie and let marinate for at least 1 hour. removed from the bag and let drip in a shallow pan or bowl while the grill is heating.
Place on the med/hot grill and cook for 6 minutes a side or until the tomatoes are done.
We love this "fun" way to prepare Steelhead or Coho.
